Everytime I try to do above 8 pt, it just has the brackets, point size etc.

Sorry, I guess I didn't explain it very well. First off, you mean 8, not 8pt (8 points); the latter provides many options for text length, btw, but don't space between the number and unit.
The developers established a limit at size 9 and size 99pt, which means that if you use a larger number in your code (i.e. size=10 or size=100pt), the code will not work.
But it looks to me, anyway, that size 7, 8, and 9 (
not 7pt, 8pt, or 9pt) give you the same result, so you will get the maximal text size using any of those. Therefore, typing the numbers without the unit of length (pt or px will work here) as you did in your posts only gives you 7 choices of text size: size=1, size=2, size=3, size=4, size=5, size=6, and size=7.
