Actually, we did. In episode #977, as PTRoger approaches to leave via that door while they're watching, Barnabas and RTRoger marvel at what might happen. But just as PTRoger arrives at the door, the room changes back. It was a blue screen effect, so that may be why they didn't stage anything like it again.

Just recently, with the "presumed" murder of Stella - she was about to leave by that door.  She opened the door, was shocked at who she saw about to attack her, and then they went back into the room with the doors closed as we (and Gabriel) heard the attatck.
