I think I would like to eliminate the element of the supernatural for these fights since those who have supernatural powers have an unfair advantage. Even if the person not so "blessed" were to get a temporary advantage and knock their block off, the supernatural creature would be able to get even later on by levelling a curse or spell on them. So let's assume that none of these people are going to use their supernatural powers and we'll have a fair fight.

Carolyn and Maggie over Joe.
Carolyn and Vicki over Burke.
Angelique and Josette over Barnabas.
Liz and Laura over David.
Julia and Cassandra over Barnabas.
Carolyn and Cassandra over Tony.
Vicki and Eve over Jeff, the loser gets him!
Angelique and Maggie over Joe.
Magda and Judith over anything at all!
Beth and Laura over Quentin.
Beth and Amanda Harris over Quentin (kill her Beth!)
Minerva and Judith over Trask (again, loser gets him!)
Megan and Carolyn over Jeb.
