I suppose Lang has chosen to think of this one thing as a sort of unusual blood disorder, and not supernatural.

I see your point, though it seems like Dr. Lang had no problem accepting the fact that Barnabas' vampirism was the result of a "curse" being placed upon him when Barnabas told him as much when he was still in the hospital. But the scientific thing makes sense.
