Both the Old House and Big House were used instead of the Collinsport Hospital for the care of sick or injured characters. Who were these characters and why did they need immediate assistance? Which mansion saw the most activity?

Well, perhaps not seen, but, obviously, the Old House.
(There was no hospital when the 'old house' was the 'main house'),
so, births and deaths.

The answer must be the "Big House" or present 1968 Collinwood, since more living, almost living, dying, almost dying were done there both in present as well as past, not to mention dimensional time. ;D

I'd have to vote for Matthew Morgan's cottage, circa 1897, which that notorious rascal, Quentin Collins, used as a trysting place for many of his "assignations."
In addition, Quentin, his brothers Carl and Edward (yes, even that pompous prig!), Tim Shaw, and the irrepressible Dirk Wilkins each received a shot of penicillin from their local friendly neighborhood gypsy/medicine man, Sandor Racosi, after a "night on the town" down at the docks of Collinsport. Long live the "magic bullet"!

yes, i find that very interesting, looked to me he got shot in the chest, yet they had his head totally wrapped up, he has that infamous "dangling eyeball"...i am sure that he was covered so dc wouldnt have to pay the actor a full wage, heck, may have been dc himself ;D...and for further humiliation, the voice of jeremiah was none other than dr. eric lang!!!!
