I can't see any of the characters on the show having been a candidate. So, if they had actually followed through with her becoming a vampire in 1840, I wonder if they would have introduced a new character?

Possibly Jeremy Grimes, if they introduced him into the story earlier. And it would allow Julia to play vampire cougar.

Most definitely. Angelique wouldn't have been able to control Julia and Julia would have no reason to be diplomatic in order to protect Barnabas. Would she even want to protect him under those conditions? And could Carrie become a vampire slayer?
