IIRC, often on would hear and see thunder and lightning and many comments would be made on storms.  Fans would supply wind as required.  I don't think I ever saw any character not dress in a heavy coat to go out.  Also no matter what the time of year, Collinwood and the Old House must have been very cold as there was always a fire in the fireplace! :)

I don't think I ever saw snow.

No snow, and the trees were always fully-leaved.

How was weather depicted on Dark Shadows?

Lots of thunder and lightning, but no rain and wind ONLY if a seance was being conducted and a door or window needed to fly open and blow out the candle for dramatic effect, LOL!   ;D

Slightly OT to the depiction of weather (as opposed to the weather itself), but never mind...

It was once remarked (I think by Barnabas, and I think in the scene in which he described to Vicky and Carolyn, during a power outage, Josette's flight to Widow's Hiill) that Collinwood had the worst storms in the area, or maybe even that it attracted the worst storms imaginable.  Anyway, ever since I saw that, I keep thinking to myself, "Joshua, what were you thinking when you chose the site for Collinwood?"

Not to mention the whole question of how you can plan a ship-launching when there's a 99% probability of prohibitively bad weather on any given day.

they were indeed capable of producing a rain-like effect when they wanted to.

i recall one episode shortly after they returned to the present from 1795.
vicki and julia decide to go to the collins mausoleum to look for clues on vicki's whereabouts during the seance.after they depart carolyn stares wistfully out of the drawing room windows as they are pounded by sheets of rain.
it created a memorable effect.i wish they had done it more often.

later in that same episode.
when vicki and julia arrive at the mausoleum they are bone dry(it would have been unbecoming for our leading ladies to appear with runny mascara and undone hair)but they encounter jeff clark.his rain slicker is covered with these sort of glycerin drops that simulate raindrops.i think there were some dotting his hair as well.
if i recall correctly in one early episode when roger and vicki are driving back from bangor the car is rained on as well.

As I recall there was an episode where Adam was outside and covered in water from the rain.  I can't recall which one specifically as it has been awhile since I've watched the '68 episodes.

WHAT???!!!  They *actually* put water in his HAIR!!!???  Oh the horror!  ;)

Yeah, they had to make a run for it to a shack as Devlin points out when their car was stuck(?) because of the road being washed out I believe.

I don't think I ever saw snow.

I don't remember snow either, even in the end of 1897 which they tell us takes place in December.  In Maine -- and the characters are running around Widows Hill with NO coats or thin shawls.  Period equivalent of the ubiquitous sleeveless dresses of the 60's maybe?  [laughing_devil]
